Gluten Free Apple Spice Muffins

applespice1 Can I tempt you Mr. Grimm? I bet I can. I am from Michigan. I am told that is why I am an apple snob. I like Mackintosh apples, and Spies the best. I will not eat a red delicious I think they are mealy an tasteless. This leads to my aversion to canned apple sauce and bottled apple juice. I make apple sauce when ever I can find Macs. Living in Florida I never see a Spie. I believe they call these Heritage apples. Figures, champaign taste, coke-a-cola pocket. All this being said I use good old Mott's when I am out of my own apple sauce. Yes, this recipe is that good. I will tell you more about my tricks with apple sauce later. Now is the time for muffins. Let people try them before you tell them they are gluten free. It is so much fun to see their faces after they find out. Enough chat. Let's get to baking! Apple Spice Muffins

  • 3 1/2 cups Gluten Free All Purpose flour (I use Bob's Mill)
  • 3 teaspoons Xanthan Gum
  • 2 teaspoons Baking Soda
  • 1 teaspoon Salt
  • 3 teaspoons Cinnamon
  • 2 teaspoons Allspice
  • 2 teaspoons Nutmeg
  • 1/2 teaspoon Ground Clove
  • 1 cup Shortening
  • 2 cup Sugar
  • 2 cups Apple Sauce
  • 2 Eggs
  • raisins (optional)
  • pecans (optional)
  • caramel pieces (optional)
  • diced apples (optional)

Combine flour, baking soda, salt, cinnamon, allspice, nutmeg, clove, and xanthan gum in a large mixing bowl. In a separate bowl mix together shortening, sugar, eggs, apple sauce, and eggs. Pour mixture into the dry mix and stir. Now fold in any optional items you have chosen. Separate into greased muffin tins. If you would like to add a topping now would be the time. Place in an oven that has been preheated to 350 degrees bake for 12-15 minutes muffin should spring back to the touch when done. This mixture can also be baked in two 9 inch rounds, or a 9x11 pan or as a sheet cake. This cake is wonderful when top with cream cheese frosting.. Let your imagination go wild... Update: I topped these with the following and baked. They are what we call, Apple Spice Crunch Muffins. Topping

  • 2/3 - 3/4 cups Brown Sugar
  • 1 cup Bean Flour Mix
  • 3/4 teaspoon Nutmeg
  • 3/4 teaspoon Cinnamon
  • 1/2 cup Butter

The crunchy sweet topping is caramel like in flavor and adds a wonderful texture. I have even had non gluten free people ask for theses on many occasions.   Live, Laugh and Enjoy! ~Fire-Eyes
