Gluten Free Bean Soup

22654_273557611723_7606609_n This dish is not only gluten free but also vegan. We need to first collect the beans. Gather up some dried beans, Any kind will do. Get a big pot or bowl. Pour all your beans in. Mix them up and put them in an air tight container. We use an old Pickle Jar. A big one. Our mix contains:

  • Dark Red Kidney Beans
  • Light Red Kidney Beans
  • Yellow Split Peas
  • Green Split Peas
  • Lentils
  • Pinto Beans
  • Navy Beans
  • Great Northern Beans
  • Black Beans
  • Pink Beans

You can also use Garbanzo beans, Black Eyed Peas, or anything else you can find. Wash 1 1/2 cups of bean mix Cover the beans with water and 1 tablespoon of salt soak over night drain, rinse and then add water until beans are just covered add 28 ounces Tomatoes 1 dice onion 1 clove garlic 1 dice green pepper juice from 1 lemon 1 table spoon vegetable bullion simmer for at least 3 hours the longer it simmers the thicker it gets.
