Gluten Free Bourbon Chicken

bubon_chicken I am honestly not sure how they make this in food courts in the middle of Malls. I am, most likely, blissfully ignorant. This is similar if not better; in my opinion. Also is is fairly easy. What you need:

  • Chicken 1-2 lbs skinless boneless breasts or thighs (thigh are what they use at the Mall)
  • Peppers green, red, yellow what ever you like
  • 1 Sweet Onion
  • 2-4 tablespoons oil (EVOO, Peanut, Corn, Your Choice)
  • 1/4 cup Ketchup
  • 1/4 cup Brown Sugar
  • Dash of Liquid Smoke (be careful a little goes a long way)
  • 2 table spoons Soy Sauce (make sure it is gluten free)
  • 1 tablespoon tap water
  • salt
  • pepper

Cut chicken into bite sized pieces Slice peppers and onions heat oil in fry pan or wok. I use a cast iron skillet put chicken in pan add salt and pepper to taste stir with wooden spoon or spatula until meat is cooked though add peppers and onions stir until cook tender add all other ingredients stir and simmer until desired thickness. I serve over fried rice. I use Sunbird Mix. I find it at my local grocery. Make sure all your ingredients are gluten free. Live, Laugh and Enjoy! ~Fire-Eyes
