Gluten Free Cauliflower and Broccoli Cheese Soup

 I asked my husband what soup should I post. The first words out of his mouth were "Cauliflower and Broccoli Cheese Soup." I knew I had a winner. Then I took a minute and realised that I do not have an actually written down recipe for that. I usually start with a pot of water and go from there. So I will do my best to walk you through the process. Prep Up:

  • 1 bunch Celery Chopped
  • 1-2 Onions Chopped
  • 2 heads of Broccoli Cleaned and cut into Florets
  • 1 Head of Cauliflower Cleaned and cut into Florets
  • 1 Block of Velveeta Cheese Cubed
  • 4-8 Cups of stock chicken or vegetable work the best

 

  1. Put 4 cups of stock into a stock pot or slow cooker
  2. put in your vegetables
  3. cook until vegetables are soft
  4. add cheese one cube at a time while stirring slowly

It is that simple. Add more stock if you would like it to be thinner or add more cheese if you would like it to be thicker. Enjoy!
