Gluten-Free Chocolate Chip Cookies

  • 2/3 Cup Shortening
  • 2/3 Cup Butter (softened)
  • 1 Cup Sugar
  • 1 Cup Packed Light Brown Sugar
  • 2 Eggs
  • 2 Teaspoons Vanilla
  • 2 Cups All Purpose GF Flour
  • 1 Cup Corn Starch
  • 2 Teaspoons Xanthan Gum
  • 1 Teaspoon Baking Soda
  • 1 Cup Nuts (optional)
  • 12 ounces Chocolate Chips

Cream together the shortening, butter, sugar, brown sugar, eggs, and vanilla

in a separate bowl mix flour, xanthan gum, and baking soda

now add your we mix to your dry

after combined add Chocolate Chips and Nuts if desired

drop by spoonfuls or roll into balls

place on ungreased cookie sheet

bake @375 for 8-10 minutes

cool on wire racks or parchment
