Gluten Free Chocolate Cookies with Mint Chocolate Chips

DSCN0043 These cookies turn out even better then expected. I based them on a cookie my mother came up with this past Christmas. She used White Chocolate Mint M&Ms. They were also not gluten free. I was in the store and looking at the Andes Mint Chips. I was please to read that they are:

  • Nut Free
  • Gluten Free
  • Peanut Free
  • Contains Soy
  • Contains Milk
  • Kosher

It is nice to see things like this. They are so few and far between. They remind me of a soft Girl Scott Thin Mint; only soft. I had a bit of butter cream icing in the fridge. I colored it green and piped in between two cookies. This is an optional step. I am considering these for the Saint Patrick's Day Treat for the kid's school.

  • 1 1/2 cups AP GF Flour
  • 2/3 cup Corn Starch
  • 1 teaspoon Xanthan Gum
  • 1 teaspoon Baking Soda
  • 1 1/4 cup Butter (soft)
  • 2 Eggs
  • 3/4 cup Cocoa Powder
  • 1/2 teaspoon Salt
  • 2 cups Sugar
  • 2 teaspoons Vanilla
  • 1 2/3 cups Chips (a bag)
  1. Beat Butter and Sugar until fluffy
  2. add Eggs and Vanilla
  3. add Dry
  4. fold in Chips
  5. Drop spoonfuls onto greased cookie sheet
  6. bake 8-10 minutes (no more)
  7. let cool on the pan for 10 minutes
  8. remove and allow to cool compleately
