Gluten Free Chocolate Pancakes

 This is one of those recipes that is not very exact. I do hope it gives you enough of a direction so that you can follow your own ideas to their conclusions. The idea for this recipe start with a bunch of posts I saw last year for Valentines day Red Velvet Pancakes. I t hung out for quite sometime and didn't make a lot of noise. One day I was going to make pancakes for my kids and didn't have all the ingredients I needed. I did, however, have a bag of Bob's Red Mill Gluten Free Brownie Mix. Why not make chocolate pancakes? As I started getting my thoughts together I could here the Aunts from the movie Practical Magic; ":In this house we have chocolate cake for breakfast, and never bother with silly little things like bedtimes, or brushing our teeth." Well, we were not going that far, but a little chocolate for breakfast every now and then could be fun.

GF Chocolate Pancakes

  • 1 cup milk
  • 2 eggs
  • 1 cup flour
  • 2 tablespoons melted butter
  • 1 teaspoon pure vanilla extract
  • 2 cups Brownie Mix
  1. Whisk all ingredients together
  2. Ladle small portions onto a greased griddle
  3. watch for the edges to go from batter to cake consistancy
  4. flip gentley
  5. cook until just done (do not over cook)

Be careful when cooking these. Keep your heat at a medium level or they will burn.

Serve as is, with fresh fruit and whipped topping, or a little bit of glaze.

These also make a fun dessert for dinner parties. Live Laugh and Enjoy! ~Fire-Eyes
