Gluten Free Lemon Blueberry Muffins

I am sorry there is no picture for these; yet. There will be. I honestly did not think they would turn out quite as awesome as they did. I love Lemon Poppy Seed Muffins. I had a box of blue berries and hungry kids. I made double this recipe and froze half the muffins. They are good warm out of the oven; but even better once thy cooled down.

 

  • 1 cup Gluten Free All Purpose Flour
  •  3/4 cup Corn Starch
  • 1 1/2 teaspoons Xanthan Gum
  • 1 teaspoons Baking Soda
  • 1/2 teaspoon Salt
  • 1/2 cup Shortening
  • 1 cup Sugar
  • 1 cup Apple Sauce
  • 1 Eggs
  • 1 teaspoon Vanilla
  • 1 teaspoon Lemon Extract
  • 1 cup Blueberries
  • Lemon Zest (if available)
