Gluten Free Lemon Brownies

DSCN0029 I have been seeing a lot of lemon recipes the last week or so. I love lemon, so this was not a bad thing at all. Then; I began to see recipes for Lemon Brownies. I couldn't believe it! How could I have never had such a thing? I looked over a few recipes and none of them were gluten free. I decided that I was going to try. I outlined my ideas and waited a couple of days. I looked them over this morning and made them. They came out wonderful, and on the first try. I have to say I was having quite the prideful moment. These are dense like a brownie and very tart.

  • 2/4 cup Glutinous Rice Flour
  • 1/4 cup Cornstarch
  • 1 teaspoon Xanthan Gum
  • 3/4 cup Sugar
  • 1/4 teaspoon Salt
  • 1/2 cup Butter (soft)
  • 2 large Eggs
  • Juice and  Zest from one Lemon (about 2 tablespoons each)
  • 1 teaspoon Real Lemon Extract (optional)

 

  1. Cream togeather, butter, sugar, and eggs; until fluffy
  2. Add the rest of your ingredients and mix well
  3. Pour into a 8x8 greased pan
  4. bake at 350 for 25 min

As you Brownies cool you can make up a little glaze.

  • 1 cup Powdered Sugar
  • 4 tablespoons Lemon Juice
  • add Zest if available
  1.  Whisk together
  2. pour over Brownies
  3. chill, cut, serve
