I never really like the fastfood counter part of these, but I always like the idea. I also, like the idea of something fast, warm, and yummy in the mornings.  (excuse the picture. The Sausage was bigger then I thought.) You need one special item to make these. You need a Muffin Top or Whoopi Pie pan. They are the same thing. You can build your own breakfast sandwiches or eat them plain. I like sausage and cheese. You can use anything. I have also fill the Muffin Top Pans with eggs and baked them up to add to my husband's sandwiches.

MyGriddle Breakfast Sandwich



  • 2 1/2 cups Gluten Free All Purpose flour (I use Bob’s Mill)
  • 1 cup Corn Starch
  • 3 teaspoons Xanthan Gum
  • 2 teaspoons Baking Soda
  • 1 teaspoon Salt
  • 1 cup melted Butter
  • 1 cup Sugar
  • 1 cup Brown Sugar
  • 2 cups Apple Sauce
  • 2 Eggs
  • 1 teaspoon Vanilla ( you can also use butter or Maple extract)
  1. Whip together Eggs, Butter, Apple Sauce, Sugar, Brown Sugar and flavoring
  2. Combine the rest of the ingredients in a separate bowl and whisk together
  3. Add dry to wet and mix well ( I usually do this part in stages. Add a bit, mix; repeat)
  4. place a 1/8 of a cup (2 tables) into each greased well of the pan.
  5. Bake @350 for 12-15 min
  6. Let stand for 2-4 min
  7. Remove from pan (I use a plastic spatula)
  8. Make your sandwitches
  9. wrap them (I use deli style wax paper. It is grease resistant and microwave safe)
  10. Place in freezer bags or I use a large tupperwear container
  11. Freeze
  12. To re heat: remove from freezer container and Microwave (still wrapped in wax paper) for 1 min
