Gluten Free Peanut Butter Blossoms

Do you ever have those times when you smell something and it transports you back in time? Peanut Butter Blossoms are a Christmas tradition in our family. They also happen to be one of my favorite cookies. This morning I got out of bed and decide I was going to make them gluten free. I peeled the kisses a few nights ago with the help of my husband. So the hard part was already done. All I had to do is get my back end in gear and make me some cookies. I did and  I was so excited to find I like them better gluten free.  I even had someone outside the family try them. She thought they were good too. Try this recipe and I am sure you will be pleasantly surprised. Ingredients

  • 1 & 1/3 cups AP GF Flour
  • 1/2 cup Corn Starch
  • 1/2 cup Brown Sugar
  • 1/2 cup Shortening
  • 1/2 cup Peanut butter
  • 2 tablespoons Milk
  • 1 teaspoon Baking Soda
  • 1/2 cup Sugar
  • 1 egg
  • 1/2 teaspoon Salt
  • 1 teaspoon Vanilla
  • 4 dozen Hershey Kisses
  • Bowl with about 1/2 cup of Sugar

Cream together the Brown Sugar, Sugar, egg, Vanilla, Milk, Shortening, Peanut butter

Mix in the the remaining ingrediants except the kisses and the bowl of sugar.

Spoon out and roll into balls then roll in sugar Place on non-greased cookie sheets

Bake @ 375 for 8 min

carefully press a kiss in each cookie then bake for another 2 min.
