Gluten Free Peanut Butter Cookies


Peanut Butter Cookies are one of the most made cookies in my family. These are the first cookies I made gluten free. I will let you in on something. they were not very good. I have had more then my fair share of flops. After failed attempts and a whole lot of reading up on gluten free cooking I came up with these.

Peanut Butter Cookies

  • 1 cup Shortening
  • 1 cup Brown Sugar
  • 3/4 cup White Sugar
  • 2 eggs
  • 1 cup Peanut Butter
  • 1 1/3 cups All Purpose Gluten Free Flour
  • 2/3 cups Corn Starch
  • 2 teaspoons Baking Soda
  • 1/2 teaspoon Salt
  • 1 teaspoon Xanthan Gum
  • 1 cup Oats

Cream together Shortening, Peanut Butter, Brown Sugar, White Sugar, and Eggs

Mix in the rest of your ingredients

Roll a Tablespoons worth into a ball

Roll ball into a plate of sugar

Place on cookie sheet

Wet a fork in a glass of water and press the cookie flat

if you press twice, once horizontal and once vertical you will achieve the classic look

repeat spacing cookies about 1/2 inch apart

bake @350 for 8 min

Take out and let rest for 2-4 min

then place on parchment to cool

They are real delicate when they first come out of the oven so be very careful.

Make sure all the ingredients you use are gluten free.
