Gluten Free Spanish Rice

I simply love this dish. We grew up eating it. I have made a few adjustments here or there, but it still reminds me of our house in Michigan. I need to find a scanner or go to a photo place and scan up all these photos I have. They would be fun to share.

Gluten Free Spanish Rice

  • 1 lbs. Bacon sliced as bits
  • 1 Onion diced
  • 1 Green Pepper diced
  • 2 cans diced or stewed Tomatoes
  • 2 cups uncooked Rice
  • Salt and Pepper
  • 2 packages of Sazón with Azafrán(optional)
  1. Fry bacon until crispy
  2. Add Onions and Green Peppers
  3. Sauté until soft
  4. Drain most of the grease from the pan. Try to leave about 2 tablespoons
  5. Add Uncooked Rice
  6. Toast rice until opaque
  7. Add remaining ingredients. Make sue to salt and pepper at this point.
  8. Bring to a boil while stirring gently
  9. Cover and reduce to a simmer
  10. let cook for 15-20 minutes or until all moisture is absorbed and rice is tender.

You can use this as a side dish or a main course. It reheats beautifully. Double the recipe and take it to your next pot luck.

As always, remember to check that all your ingredients are gluten free. Also, have fun in your kitchen.
