Gluten Free They are Cheese Crackers

Before we went gluten free one of the things we had in the house almost all the time were Goldfish crackers or Cheese Its. So, when I discovered I could make them it was a very happy day. Now, I am not going to lie to you. These are not easy. They are a bit meticulous and temperamental. I believe they are well worth it. My husband is going to make the next batch so I do not have to roll them out any more. 

They are Cheese Crackers

  • 2 Cups grated Sharp Cheddar Cheese
  • 2 Tablespoons Butter
  • 1 Large Egg
  • 1/2 Teaspoon Salt
  • 1/4 Teaspoon Black Pepper (you may want to cut this in half. We really like black pepper)
  • 3/4 Cup Rice Flour
  • 1/4 Cup Potato Flour
  • 1 Teaspoon Xanthan Gum

Beat Butter until creamy Add egg, salt and pepper Beat until blended Beat in Cheese Stir in Flours and Xanthan Gum It will appear crumbly form it into a ball with your hands Divide and roll out between wax papper until about 1/8 of an inch thick I have also placed the mixture into my pasta maker and extruded it from the machine. cut into shape choice Place on non greased cookie sheet Salt or season as you like (we like coarse ground sea salt) bake at 400 degrees for 8-10 min Sometimes we bake them a bit longer. We like them quite dark. Let them cool and store in an air tight container. If they last that long. Live, Laugh And Enjoy! ~Fire-Eyes
