Gluten Free Yum-Yum Cake

This is a favorite of mine. When I was a child my mother would make this every now and again. Of course then it was not gluten free. Now, all we have to do is get a gluten free cake mix from the store or the internet. Today I used Kinnickinnic white cake mix as my base. You could use any brand and any flavor you would like. Be sure to double check that all your ingredients are gluten free. Yum-Yum Cake Cake: Use any cake you would like as a base for this recipe. You can choose your favorite recipe from scratch or a boxed mix from the store. Bake in a 9×13 pan and let cool; or use mason jars like I did. To use the jars; simply line them up on a cookie sheet. Grease each one and fill about 1/3 to 1/2 the jar with mix. Bake as you would cupcakes. GF Yellow Cake Cake

  • 1/2 cup + 1 tablespoon Rice Flour
  • 1/2 Corn Starch
  • 1/2 cup Sugar
  • 1 teaspoon Baking Powder
  • 1/4 salt
  • 1/2 teaspoon Baking Soda
  • 1/2 teaspoon Xanthangum
  • 1/4 cup Melted Butter
  • 1/4 cup Milk
  • 2 eggs
  • 1 teaspoon of vanilla

this makes 1 layer double for a 9x13 pan

  • 8 ounces Cream Cheese
  • 1/c Cup milk
  • 2 Cups Premade Cooked and Cooled Pudding or 1package Instant Pudding mixed with 1 1/2 Cups Milk (I prefer Vanilla)
  • 16 Ounces of Cool Whip
  • 1-2 Cans Cherry Pie Filling or Crushed Pineapple
  1. Beat together Cream Cheese and 1/2 Cup of milk
  2. Mix in your prepared Pudding
  3. Spread on top of Cake
  4. Spread whipped topping on top of the Cream Cheese/Pudding Layer
  5. and the Top with Fruit
  6. Chill before serving.

As a side note. Some people like to put the Fruit on Before the Whipped Topping. The choice it yours..
