Rocky Top Rubble Sandwiches

  1. Butter two slices of Gluten Free Bread (We used Udi's)
  2. Set one slice butter side down in a fry pan
  3. top bread with cheese
  4. layer the Chicken Mixture next
  5. again add more cheese
  6. place second slice of buttered bread butter side up on top
  7. Grill each side until golden and cheese is nicely melted. Be careful when flipping or the whole thing could fall apart.
