gluten free

These are to be baked in a special pan. I have only been able to find them by Wilton. If you find some, I highly recommend buying them. They are a great tool to have in the kichen.

Mix up the following ingrediants:

  • 1 cup white sugar

  • 2 teaspoons baking powder

  • 1 teaspoon baking soda

  • 1 teaspoon ground nutmeg

  • 1/2 teaspoon ground cloves

  • 2 teaspoons ground cinnamon

  • 1 cups all-purpose gluten free flour

  • 1 cup cornstartch

We have been having a lot of restless nights as of late. The children seem to be taking turns sleeping and being awake. With three of them we are outnumbered and very worn out. We do the best we can. I drink coffee and take crazy pills. Sometimes I just cry. It is okay: Sometimes you just have to sit down and let it all out. I think some people forget that we need to do this from time to time. It is a release and a cleansing. I have done it more then I would like to admit since becoming a mother, but I think it may just go with the territory.

Chicken Kiev is one of my first thoughts when making a meal for someone for the first time. It is not that difficult to make, it looks impressive. and it tastes divine.  It is best served with mashed potatoes and green beans almondine. This is not the traditional method to make this dish. There will be no pounding or stuffing. Just simple coating. Chicken Kiev is a popular dish of boneless chicken breast pounded and rolled around cold garlic butter with herbs, then breaded and either fried or baked.

Saturday morning are not like they used to be. I remember sitting in front of the T.V. to eat cereal and watch cartoons. They didn't run cartoons on any other day. Oh, well, the hands of time point in one direction. We did eat cereal. Cocoa Pebbles. They are gluten free and my children will eat them. That is a win win.

After breakfast we started to get ready for the day. Getting grubbies on and slathering on the sun block; filling masson jars with ice, water, and lime-ade.

  • 8 ounces strawberries, washed, hulled, and cut into large dice
  • 1 cup granulated sugar
  • 1 tablespoon lemon juice
  • 1 cup whole milk
  • 8 ounces cream cheese

What's with today today? It has been a strange day today. We woke up before the kids at about 4:00a.m. They woke soon after. I had a hard time making breakfast but I got through it.

Chocolate Pancakes :)

 This is one of those recipes that is not very exact. I do hope it gives you enough of a direction so that you can follow your own ideas to their conclusions. The idea for this recipe start with a bunch of posts I saw last year for Valentines day Red Velvet Pancakes. I t hung out for quite sometime and didn't make a lot of noise. One day I was going to make pancakes for my kids and didn't have all the ingredients I needed. I did, however, have a bag of Bob's Red Mill Gluten Free Brownie Mix. Why not make chocolate pancakes?

I simply love this dish. We grew up eating it. I have made a few adjustments here or there, but it still reminds me of our house in Michigan. I need to find a scanner or go to a photo place and scan up all these photos I have. They would be fun to share.

This recipe has been in the works for quite sometime now. I was close a few times. The problems I would run into were they would tend to not taste good once they cooled or they would have little to no flavor to begin with.
