Chocolate Pancakes :)

 This is one of those recipes that is not very exact. I do hope it gives you enough of a direction so that you can follow your own ideas to their conclusions. The idea for this recipe start with a bunch of posts I saw last year for Valentines day Red Velvet Pancakes. I t hung out for quite sometime and didn't make a lot of noise. One day I was going to make pancakes for my kids and didn't have all the ingredients I needed. I did, however, have a bag of Bob's Red Mill Gluten Free Brownie Mix. Why not make chocolate pancakes?

I do not like box mixes. So, I am not sure how to compare this to those. All I really know is that we like it.

DSCN0069 These are quite simple. You can personalise them. They are tasty and fun. The first thing I do is make up a package of Bob's Red Mill Gluten Free Pizza Crust mix. After it rises I split it into 4 balls. I place 2 on opposite sides of a greased cookie sheet. Then I pat and press them out into circle like shapes.

DSCN0055 I was sceptical when I started this adventure. I am happy to report it turned out well. After canning the slaw is not crisp but is is still crunchy. It reminds me of left over fresh coleslaw. It is nice to have a way to save all the cabbage before it goes bad. Bluntly; this is sweet pickled cabbage. This makes 3 to 4 pints. Ingredients:

DSCN0043 These cookies turn out even better then expected. I based them on a cookie my mother came up with this past Christmas. She used White Chocolate Mint M&Ms. They were also not gluten free. I was in the store and looking at the Andes Mint Chips. I was please to read that they are:

DSCN0029 I have been seeing a lot of lemon recipes the last week or so. I love lemon, so this was not a bad thing at all. Then; I began to see recipes for Lemon Brownies. I couldn't believe it! How could I have never had such a thing? I looked over a few recipes and none of them were gluten free. I decided that I was going to try.
